The air is thick with the salt of crushed ice, the iron scent of fresh swordfish, the smoke of grilling sardines. You edge past crates of artichokes and wild fennel, handed a warm arancino split open to reveal saffron rice and molten ragù. It’s noisy, slightly chaotic, and instantly addictive — a first taste of a week that moves between lava, stone, and sea. Mornings start early here, with Etna always somewhere in the frame. From Catania you wind inland, watching the slopes darken from olive to black lava as the road climbs toward Rifugio Sapienza. Higher up, the air thins and cools. In late afternoon you walk the rim of the Silvestri craters, crunching over ash and cinders, steam gauzy in the slanting light. When the sun drops, the mountain glows faintly pink, and the city lights far below look very small. The next day the landscape softens. As the sky deepens, the town bells ring, and for a moment the view feels almost unreal in its precision. Days unwind by the water: a small boat nosing into sea caves around Isola Bella, light flickering on the rock; swims in cool, clear coves; slow walks through narrow lanes where laundry flaps overhead. One evening you head higher still, to Castelmola or Savoca, villages that cling to the hills above the coast. An old bar sets down a simple aperitivo — olives, toasted almonds, a local amaro. Below, the shore curves in a faint arc of lights; behind you, Etna is a dark outline against the stars. The conversation drops to a murmur, and the only sound for a moment is the clink of ice in the glass and the low hum of distant traffic, far down the mountain.
